Apple Stuffed Chicken Breasts
4 boneless chicken breasts
3 slices bacon, chopped
2 cloves garlic, minced
3 scallions, finely chopped
1 apple, peeled and chopped
Pepper to taste
Salt to taste
1/2 teaspoon thyme
1/3 cup Parmesan cheese
2 tablespoons olive oil
Cut a small pocket into the thickest part of each chicken breast and set aside.
Fry bacon until crisp. Drain on a paper towel. Add garlic and scallions to the bacon drippings; saut
